Lucie’s Boulange

Lucie’s Boulange is a Jersey micro bakery founded by Lucie Gatignol-Duval, rooted in traditional French baking and Jersey’s rural farming heritage. Based at Le Tâcheron Farm & Mill in Trinity, the bakery follows a true “grain-to-bake” philosophy, using flour milled directly on the farm where the breads and pastries are produced. Lucie is currently the first and only female baker in Jersey working exclusively with locally milled flour.

Inspired by her French training and apprenticeship in Brittany, Lucie creates handcrafted sourdough breads, brioches, pastries, seasonal cakes, and delicate mignardises using natural, seasonal, and responsibly sourced local ingredients. Working in small batches, her baking combines authentic French techniques with a strong respect for the land, sustainability, and Jersey’s agricultural traditions.

Alongside the bakery, Lucie also runs baking workshops for adults and children, sharing traditional skills and encouraging a connection to slow food and handmade baking. Through Lucie’s Boulange, she continues to celebrate craftsmanship, local produce, and the joy of real bread made from locally grown grain.
