Lucie’s Boulange is a micro bakery rooted in French baking tradition and Jersey’s rural landscape. Founded by Lucie Gatignol-Duval, the bakery is based at Le Tâcheron Farm & Mill in Trinity, a site dedicated to preserving farming heritage, rare breeds and sustainable land use.

Lucie is currently the first and only female baker in Jersey working exclusively with locally milled flour, produced directly on the farm where her production kitchen is based. Working closely with the farm and its mill, she follows a true “grain-to-bake” approach — where grain grown on the land is milled and transformed into breads and pastries on the same site.

Her bakes are handcrafted in small batches using natural, seasonal and responsibly locally sourced ingredients, with a strong emphasis on flavour, craftsmanship and respect for the land. Inspired by authentic French recipes, the range includes sourdough breads, brioches, pastries, seasonal cakes and delicate mignardises.

Alongside the bakery production, Lucie also runs baking classes from the farm, sharing traditional skills and knowledge with both adults and children. These workshops celebrate slow food, seasonal ingredients and the pleasure of learning how to bake from scratch.

About Lucie

Originally from France, Lucie trained in traditional baking through an apprenticeship in Brittany, where she learned classic French techniques and the importance of working with quality ingredients. Through Lucie’s Boulange, she now combines French know-how with Jersey’s agricultural heritage to reconnect people with real bakes and locally produced food.
